This cake is a huge favourite.  To make extra special serve warm with brandy cream or butter.  It freezes well.


225 g (8oz) baking margarine from the fridge

225 g (8oz) caster sugar

300 g (10oz) SR flour

2 tsp baking powder

4 eggs

2 tbsp milk

About half a 410 g Jar of mincemeat, maybe a little more.

Finely grated rind of 1 large orange

For the topping: about 3 tbsp of demerara sugar

You will need a traybake tin 30 x 23 cms/12 x 9 inches lined with foil and greased.

Measure all the cake ingredients and place in a bowl. Mix until smooth.  Pour into prepared tin.

Bake in a pre-heated oven 180 degrees C/350 F/160 C Fan/ Gas 4.

Leave to cool in the tin.

Be sure to be accurate with the milk.  If you add too much the mixture will be too soft and the fruit wll sink to the bottom of the cake.
